It’s summer and we are already thinking about the winter. We are using the time here at the farm to check our equipment and make sure everything is ready for the autumn and winter part of the expedition. One thing that is very important in the winter is eating enough energy, so we have been baking almost 400 energy bars the last days. These taste 10 times better than the ones you get in the shops and they have more energy too!

Recepie for 2 plates (32 bars)
16 dl Outmeal
120 g Cashew Nuts or walnuts
100 g Shredded coconut
200 g Cranberries
125 g Seed mix (pumpkin, sunflower etc…)
175 g Honey
8 eggs
75 g Brown sugar
200 g Dark chocolate
3 dl Apple juice
75 g chia seeds
50 g Coconut oil
Instructions:
Add the chia seeds to the apple juice, so that they can soak for a while.
Mix all the dry stuff together in a bowl and add juice, melted coconut oil, eggs and honey. Mix all well to together. Then smear it out on 2 baking sheets. The size should approximately be a little larger than a A4 paper. Bake in the oven at 160 ºC for 20-25 min. Let it cool off and then cut each plate in to 16 pieces.
